Signature Recipes

Please post your signature recipe for the dish you will bring to the Wednesday Luncheon with River Legacy

    I'm bringing a main dish.

    Ziti Casserole!

    2 boxes of whole wheat ziti noodles
    1 1/2 lbs of lean ground beef
    25oz Prego traditional sauce
    1/8 cup of finely chopped green onions
    1/8 cup of finely chopped green bell peppers
    1/8 cup of finely chopped celery
    1 cup cubed Velveeta cheese
    1 cup four cheese blend
    1 pan of GOODNESS!!!

    I'm bringing the fruit salad...

    4 Kiwis, sliced
    1 medium bag frozen strawberries (partially frozen)
    2 Gala apples
    2 Granny Smith apples
    1-2 cans mandarin oranges
    1-2 cups broken pecans
    1 can cherry pie filling (or other flavor)
    2-4 bananas, sliced
    1-2 teaspoons vanilla

    Optional Goodies:
    1 cup shredded coconut
    1 cup miniture marshmallows

    Combine all ingredients, except those that will turn brown, and allow to chill for 4-8 hours. Add bananas, pears, apples, etc...after they have been dipped in lime juice.

    YUM!

    I'll bring the green salad

    4 red delicious tomatoes - sliced
    1 head of crispy romaine lettuce
    2 cucumbers - sliced
    1 red onion - sliced
    2 carrots - sliced
    black olives
    sprinkle with croutons
    Italian/Ranch dressing

    Marinated Cheese
    1/2 cup olive oil
    1/2 cup white wine vinegar
    3 T chopped fresh parsley
    3 T minced green onion
    1 tsp sugar
    3/4 tsp dried basil
    1/2 tsp salt
    1/2 tsp freshly ground pepper
    3 cloves garlic, minced
    1 (2 oz) jar diced pimiento, drained
    1 5 1/2 x 2-x 1-inch block sharp Cheddar cheese (8 ounces), chilled
    1 (8-ounce) package cream cheese, chilled
    Garnish: fresh parsley sprigs
    Combine first 10 ingredients in a jar; cover tightly, and shake vigorously. Set marinade mixture aside.
    Cut block of Cheddar cheese in half lengthwise. Cut crosswise into 1/4 - inch-thick slices; set aside. Repeat procedure with cream cheese. Arrange cheese slices alternately in a shallow baking dish, standing slices on edges. Pour marinade over cheese slices. Cover and marinate in refrigerator at least 8 hours.
    Transfer cheese slices to a serving platter in the same alternating fashion, reserving marinade. Spoon marinade over cheese slices. Garnish, if desired. Serve with assorted crackers.
    Yield: 12-16 appetizer servings.

    Bake one chocolate cake according to package directions in 2 round cake pans. Cut into inch cubes when cool,

    Other ingredients:
    2 large packages instant chocolate pudding
    4 cups milk
    1 tub cool whip
    3 Heath bars, crushed into smalll pieces (or buy the bag of crushed Heath bar pieces.)

    Mix pudding mix with 4 cups milk for 4-5 minutes until blended and thick.
    In a large bowl, layer 1/2 of the chocolate cake cubes.
    Cover the cake with a layer of chocolate pudding, using about half of it.
    Cover the pudding with a layer of Coolwhip, again using about half of the tub.
    Sprinkle with the Heath bar pieces.
    Repeat the entire procedure one more time.
    Chill until you are ready to serve it.
    Enjoy!

    Deviled Eggs

    18 eggs
    Dijon mustard Sorry! On this one I
    mayonnaise don't measure
    green onions
    paprika

    Boil the eggs. Remove the shells and slice in half. Scoop out the yolks. Put two green onions in the food processor. Process until they are finely chopped. Add yolks, mustard, and mayonnaise and process until smooth. Fill egg white halves with the yolk mixture.
    Sprinkle with paprika.

    Poblano Pepper/Corn casserole

    7 poblano peppers
    2 -3 fresh corn sliced off the cob
    1 can of cream mushroom
    1 can of sliced mushrooms
    1 package of Mexican style cheese/your choice of cheese will do fine
    2-3 table spoons of cooking oil

    Place poblano peppers over comal (will explain) and turn around until all sides have toasted a bit. Allow them to cool and peel of skin. Heat oil in pan, add peppers, corn, cream mushroom, and sliced mushrooms. Stir after ingredients are well mixed sprinkle cheese on top. Serve and enjoy!

    I'm bringing a Macaroni Salad

    1 lb pound (dry) elbow pasta
    1/2 cup celery, diced
    1/2 cup frozen peas, thawed
    1 jar (4-ounce) sweet pimentos, drained and sliced
    1/4 cup extra-virgin olive
    1/4 cup mayonnaise
    1–2 apple cider vinegar
    1–2 teaspoons honey
    1 medium shallot, minced
    sea salt, to taste
    ground pepper, to taste

    I'm bringing my famous pizza dip.

    1 pkg Cream Cheese-softened (full fat or low-fat- not fat free)
    Italian Seasoning and/or Garlic Powder (to taste)
    about 1 cup Tomato Sauce (or pizza sauce)
    Cheese- any kind- I prefer mozzarella or the 4 cheese Italian blend
    *optional* Whatever ingredients you like on your pizza- (finely chopped)

    Crackers for dipping (Ritz and Club crackers are best.)

    Preheat oven to 350 degrees.
    Mix the seasonings into the cream cheese. Spread it evenly onto the bottom of a 9 by 9 pan.

    Pour sauce over cream cheese mixture. Place cut up pizza ingredients (like pepperoni or canadian bacon) on top. Spread a light layer of tomato sauce over it. Top with cheese- make sure tomato sauce is completely covered.

    Put in the oven for 10 minutes or until dish is heated and cheese is melted.

    EARTHQUAKE CAKE

    1 c. coconut
    1 c. chopped nuts

    Mix together and spread in bottom of a greased 9 x 13 inch oblong pan.

    1 box German chocolate cake mix

    Mix according to directions and then pour over coconut and nuts. Beat together:

    1 (8 oz.) cream cheese, softened
    1 stick butter
    3 c. confectioners' sugar (powdered)

    Mix well. Spoon over cake mix. DO NOT STIR INTO CAKE MIX. It will cook into your cake to make a filling. Bake at 350 degrees for 45 minutes. The top of the cake will not be smooth. It will crack open and be lumpy looking like an earthquake.
